Here is my twist on devilled eggs, and it's absolutely delicious!
Serves 2 | Gluten free, low carbohydrate/keto option
INGREDIENTS AND INSTRUCTIONS
6 hard boiled eggs, cooled and peeled
3 tablespoons mayonnaise
1 tablespoon butter, softened
1.5 tablespoons sweet chilli sauce (I used a keto one by Nothing Naughty)
1 teaspoon curry powder
Good pinch of celtic salt
Sliced spring onion for garnish
0.5 teaspoon paprika
Slice hard boiled eggs in half, and place the yolks in a small bowl. Gently mash the yolks with a fork.
Stir in mayonnaise, butter, sweet chilli sauce, curry powder and salt until well combined.
Using a teaspoon, scoop the filling into the egg white halves. Placed sliced spring onion on top and sprinkle some paprika to garnish.
Chill for at least 20 minutes before serving.
