I recently bought some organic apples from the supermarket, but they were floury, bruised and soft so I had to use them up. This recipe really is delicious, simple and perfect for lunchboxes. We enjoy with butter liberally spread on top once it's cooled a little!
Makes one loaf.
Grain free, Gluten free, Paleo
MAKE THIS RECIPE
5 apples, peeled/cored/cut into 1-cm cubes 🍎
1/4 cup coconut oil (if not strictly paleo/dairy free, then butter is also suitable)
1t cinnamon powder
6 eggs
1/2 cup granulated sweetener (or you can use 1/4 cup honey)
2 cups almond meal
1/4 cup coconut flour
1 tsp baking soda

Preheat oven to 170C. Line loaf tin with baking paper.

Place prepared apples, butter and cinnamon in a small pot and bring to boil. Reduce heat to low and simmer for 15-20 minutes until apples are soft. Set aside to cool.

Place eggs and sweetener in a large bowl and using an electric beater, mix for 2-3 minutes until fluffy. Add the dry ingredients and cooled apple mixture, folding until well combined.

Line loaf tin with baking paper and pour mixture in. Bake for 40 minutes or until skewer comes out clean.

Allow to cool. Serve.
