Paleo Apple Cinnamon Loaf

I recently bought some organic apples from the supermarket, but they were floury, bruised and soft so I had to use them up. This recipe really is delicious, simple and perfect for lunchboxes.

 

We enjoy with butter liberally spread on top once it's cooled a little!

Makes one loaf | Grain free, Gluten free, Paleo

INGREDIENTS AND INSTRUCTIONS

 

5 apples, peeled/cored/cut into 1-cm cubes 🍎

1/4 cup coconut oil (if not strictly paleo/dairy free, then butter is also suitable)

1t cinnamon powder

6 eggs

1/2 cup granulated sweetener (or you can use 1/4 cup honey)

2 cups almond meal

1/4 cup coconut flour

1 tsp baking soda

  • Preheat oven to 170C. Line loaf tin with baking paper.

  • Place prepared apples, butter and cinnamon in a small pot and bring to boil. Reduce heat to low and simmer for 15-20 minutes until apples are soft. Set aside to cool.

  • Place eggs and sweetener in a large bowl and using an electric beater, mix for 2-3 minutes until fluffy. Add the dry ingredients and cooled apple mixture, folding until well combined.

  • Line loaf tin with baking paper and pour mixture in. Bake for 40 minutes or until skewer comes out clean.

  • Allow to cool. Serve.
