The PERFECT way to use the meat left on a whole chicken after you've made your gut-loving broth. After poaching for a couple of hours and allowed to cool, the meat is so soft you can basically shred it with your fingers - so I've teamed it with some flavourful ingredients to make a nutrient dense, gut supportive meal that not only tastes really good but also helps nourish you at all levels.
Rich in supportive protein and fats, it's a perfect brunch/lunch so whether it goes in the lunchbox or kept in a glass container in the fridge, this is one simple dish you'll make over and over.
MAKE THIS MEAL
▢ Chicken meat and skin shredded from a poached chicken
▢ 1 celery stalk, thinly sliced on an angle
▢ 3 stalks spring onion, thinly sliced
▢ 0.5 cup cashew nuts
▢ 0.25 cup coriander, chopped
▢ 0.5 cup good quality mayonnaise
▢ 0.25 cup organic mango chutney
▢ 1 T organic curry powder
▢ juice from one large orange
▢ sea salt and freshly ground black pepper
▢ coriander for garnish.
Combine all ingredients in a large serving bowl.
Allow to chill for 1-2 hours before serving either with some shredded lettuce, or on top of organic sourdough, seedy rye bread or your fave gluten free bagel.
